X30Cr13 (EN 1.4028 / AISI 420) per EN 10088. Higher C than 410 (0.26-0.35%) gives HRC 49-56 after hardening — significantly better edge retention for cutlery. Good corrosion resistance in hardened+polished condition. Standard for premium kitchen knives, surgical scissors and clamps, dental instruments and gauge plates requiring high hardness with basic stainless performance.
